Ingredients: (add in this order)
- 1 whole naval orange chopped roughly
- 3/4 cup melted butter
- 3 eggs
- 1 cup caster sugar
- 1.5 cups SR Flour
Preheat oven to 180C (160°C fan forced) prepare your tin & line base. Place whole orange in blender or processor and process. Add remaining ingredients except SR flour, blend well. Place in a basin and fold in flour.
Cook in a 20cm tin, 40 minutes in moderate oven
Ice with orange icing
- 1/3 cup butter softened
- 1.5 cups icing sugar sifted
- 2 tbs orange juice *to taste
- 1/2 tsp orange zest
Either lemon or orange icing goes well with this cake.... substitute orange above for lemon.
You can precook the orange in simmering water for an hour prior to mashing and adding to recipe for more intense flavour.
